Taco Chicken Quesadilla

Golden, Crispy. Packed with benefits. This Taco Chicken Quesadilla takes your classic cheesy comfort food and upgrades it with shredded chicken, melty cheese, and Spicetein Taco Seasoning for an extra boost of collagen protein in every bite.

Ingredients

FILLING:

  • 3 large boneless chicken breasts
  • 2 servings Spicetein Taco Seasoning
  • ½ yellow onion, diced

Quesadilla Build:

  • 4 large whole wheat tortillas
  • 1 ½ cups shredded Mexican blend or cheddar cheese
  • ½ cup black beans (optional)
  • 1 tbsp olive oil or avocado oil for skillet

Optional Toppings:

  • Greek yogurt
  • Diced avocado
  • Lime wedges
  • Chopped cilantro

Instructions

Cook the Protein:

  • Cook and shred the chicken breasts.
  • Sauté onion and garlic for 2 minutes.
  • Add shredded chicken.
  • Stir in 2 servings Spicetein Taco Seasoning and 2-3 tbsp of water or broth.
  • Simmer for 2-3 minutes until thickened and fully coated.

Assemble:

  • Lay tortilla flat. To the middle, add cheese, taco chicken mixture, optional black beans, and a little more cheese on top. Fold into a quesadilla shape.

Cook:

  • Heat olive oil in skillet over medium heat.
  • Cook quesadilla 2-3 minutes per side until golden brown and cheese is melted.
  • Repeat with remaining tortillas.

Serve:

  • Slice into wedges. Top with Greek yogurt, avocado, and cilantro.
