Ingredients

BASE:

  • 4 cups cauliflower rice (fresh or frozen, thawed if frozen)
  • 1 tbsp olive oil
  • Salt & pepper to taste

PROTIEN:

  • 1 lb lean ground beef or turkey (90/10 recommended)
  • 2 servings Spicetein Taco Seasoning
  • ¼ cup water or beef bone broth
  • ½ yellow onion, diced
  • 2 garlic cloves, minced

BOWL ADD-INS:

  • ½ cup canned black beans (drained & rinsed)
  • ½ cup diced tomatoes or pico de gallo
  • 1 avocado, diced
  • ¼ cup shredded cheddar or Mexican blend cheese
  • 2 tbsp chopped cilantro
  • ½ tbsp chopped green onions
  • Lime wedges
  • Optional Drizzle: Plain Greek yogurt or hot sauce

Instructions

Prepare the Cauliflower Rice:

  • Heat olive oil in a large skillet over medium heat.
  • Add cauliflower rice and season lightly with salt and pepper.
    Cook for 5-7 minutes, stirring occasionally, until tender and slightly golden.
  • Remove from heat and set aside.

Cook the Protein:

  • In a separate skillet over medium heat, add olive oil.
  • Sauté diced onion and garlic for 2 minutes until fragrant.Add ground meat and cook until browned.
  • Stir in 2 servings of Spicetein Taco Seasoning and ¼ cup water or beef bone broth.
  • Simmer for 2-3 minutes until thickened and fully coated.

Assemble the Nachos:

  • Divide cauliflower rice evenly into four bowls.
  • Top with seasoned taco meat, black beans, diced tomatoes, avocado, and shredded cheese.
  • Finish with chopped cilantro, green onions, a squeeze of fresh lime, and a dollop of Greek yogurt
