Sweet Potato Nacho Platter

Crispy. Cheesy. Filled with benefits. Nachos, leveled up. Thinly sliced sweet potatoes are baked until crispy and golden, then loaded with Spicetein Taco Seasoning, melty cheese, and fresh toppings. It’s a healthier twist on nachos delivering serious flavor.

Ingredients

BASE

  • 2 medium sweet potatoes, sliced into ¼-inch thick rounds
  • 1–2 tbsp olive oil
  • Salt & pepper to taste

TOPPING:

  • 1 cup cooked ground beef, turkey, or chicken
  • 2 servings Spicetein Taco seasoning
  • ½ cup shredded cheddar or Mexican blend cheese
  • ¼ cup black beans (optional, for extra fiber/protein)
  • ¼ cup diced red onion
  • ¼ cup diced tomatoes or pico de gallo
  • 1-2 tbsp chopped cilantro
  • 1-2 tbsp chopped green onions (optional)
  • 1 tbsp sliced jalapeños (optional)
  • Lime wedges for garnish
  • Optional drizzle: plain Greek yogurt, avocado, or hot sauce

Instructions

Prep and Bake the Sweet Potatoes:

  • Preheat oven to 425°F. 
  • Cut sweet potatoes into ¼ inch thick slices. In a bowl, toss the slices with olive oil, salt, and pepper. Spread in a single layer on a parchment-lined baking sheet.
  • Bake for 20-25 minutes, flipping halfway through, until golden and crispy on the edges.


Prep the Protein:

  • In a skillet over medium heat, saute onion until soft. 
  • Add the ground meat and cook until browned.
  • Stir in 2 servings of Spicetein Taco Seasoning and ¼ cup water or beef bone broth. Simmer for 2-3 minutes.

Assemble the Nachos:

  • Once the sweet potatoes are done, transfer to a heat-safe dish or sheet pan. Top with seasoned meat, black beans, and cheese.
  • Return to the oven for 5 minutes, or until the cheese is melted.
  • Top with tomatoes, jalapeños, diced avocado, Greek yogurt, cilantro, and green onions. Serve with lime wedges.
